VIETNAMESE MEATBALLS

I’m not going to lie, this is my favorite recipe from Dr. Laura Brenner of Studholme Chiropractic! It’s so good that I gently prod her every December to bring it to our holiday pot-luck. If you’re looking to fight the chill of winter, putting these tasty meatballs in your tummy is a great way to warm up from the inside out! They’re also easy to make and transport, so they’re perfect to take to holiday pot-luck parties. We highly recommend making a double batch, because you’re definitely going to be craving them again the next day.

Servings: 4-6

  • 2 pounds lean ground beef or ground pork/turkey combo
  • 1/2 cup finely chopped fresh basil
  • 8 garlic cloves, minced
  • 6 green onions, finely chopped
  • 2 tablespoons fish sauce
  • 2 tablespoons Sriracha hot sauce
  • 2 tablespoon sugar
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons sea salt

Preheat oven to 400 degrees.  Gently mix all ingredients in large bowl. Using moistened hands, roll meat mixture into 1-inch meatballs. Arrange on baking sheet.  Bake for 20 minutes and enjoy!
